Local Cuisine in Goa
Goans tend to eat more or less the same food every day, beginning often with just a bread roll dipped in instant milk coffee, the Goan breakfast.
The curries tend to feature a lot of coconut, chilli and the usual Indian spices and will generally feature fish of some description. Fish curry and rice can be said to be the archetypal Goan dish and tends to be fiercely hot though they can make it more mild for foreigners.
A good antidote to a belly full of burning chilli is to take a sweet lassi, the drink made from yoghourt which is renowned for it's cooling, settling effect.
The Goans often eat the local rice which is wholegrain and organic but, in reverse to the fashion in the West, they feel that the more expensive white rice is desirable.
Cashews, basil, lemon grass and shrimp also feature frequently in Goan cuisine - for many travelers, though, the chilli wipes out half of the taste buds and these subtle flavours pass by unnoticed.
